Taste Buds: Parmesan & Bacon Roasted Brussel Sprouts

I always liked vegetables as a child, some more than most. Brussel sprouts fell to the bottom of my love category. I could manage them but I would never choose them willingly. However that all changed when I visited a small diner in Georgia and I had their signature side, roasted Brussel sprouts. That fired a new love, Brussel sprouts are now at the top of my list of favorite vegetables. The recipe I made to copycat the one I had is simple. And often I will make it without the bacon (even though the bacon makes it twice as delicious). The healthier without bacon is still super yummy.

    RECIPE: PARMESAN AND BACON ROASTED BRUSSEL SPROUTS
INGREDIENTS
12-14 large Brussel sprouts
2 tablespoons of olive oil
¼ cup parmesan cheese
4 strips of bacon

DIRECTIONS
1. chop Brussel sprouts into ribbons
2. Bake at 400 degrees for 10-12 minutes until tender.
3. While the Brussel sprouts are baking fry the bacon in a pan until crisp.
4. Remove Brussel sprouts from the oven. Toss with bacon, cheese and oil.
