Taste Buds: Rogue Chili

Mr. Rogue has a spicy boilermakers chili recipe he loves that he got for his mom but I like something a little more calm and not so spicy. I made a big batch of my Rogue Chili yesterday. With lots of tasty different beans and lots of veggies it is a hardy simple chili that even my Little Cricket loves. Hope you enjoy.



2 green pepper
2 red pepper
1 yellow pepper
2 yellow onions
2 pounds ground beef
1 pound sweet Italian sausage
4 cans (28 ounces) diced tomatoes
1 (6 ounce) can tomato paste
2 cans black beans
2 cans kidney beans
2 cans pinto beans
¼ cup chili powder
2 tablespoons oregano
2 tablespoons cumin
Salt and pepper to taste

1. Brown the meat.
2. Add seasonings and spices.
3. Add chopped peppers, onions to the meat and brown.
4. Fill large pot with diced tomatoes, tomato paste, and beans.
5. Add meat mixture to pot. Bring to boil. Lower the temperature to a simmer and cook for at least an hour preferably two.
6. Serve over rice, sprinkle with cheese or a dollop of sour cream.
