Taste Buds: Carolina Sugared Pecans


I love love love sweets but I don’t love all the processed sweets I tend to grab because they are easy. Its better when I cook my own but then I am usually sitting there with a whole pie I really shouldn’t eat. A few weeks ago Mrs. Dancer’s parents came to visit and they brought me a few little gifts. I love her parents, I spent a portion of my childhood in their home and actually call them mom and dad, now I love them even more. Her mom brought me a bag of Carolina Sugared Pecans, the first I have ever tried, and they were so INCREDIBLE that I had to know where she got them. When I found out that she made them, as in a recipe I could obtain, I was THRILLED. This was a sweet snack that would be relatively good for me. Nuts are healthy and toasted nuts with a light coating of sugar are super easy to make and super yummy to eat!

    RECIPE: Carolina Sugared Pecans
6 cups pecan halves
2 egg whites
2 tablespoons water
1 cup white sugar
½ teaspoons salt
3 teaspoons cinnamon

1. Preheat your oven to 225 degrees.
2. Put parchment paper on two baking sheets.
3. Combine egg white and water in a mixing bowl and beat with a whisk until foamy. Gently stir the pecans in this mixture until the nuts are fully coated.
4. Put the sugar, salt and cinnamon in a large ziplock bag. Add the nuts and toss until the nuts are evenly coated.
5. Spread nuts out on the parchment lined baking sheets and bake for 80 minutes making sure to stir them every 20 minutes so they are evenly cooked.
6. Let them cool on the pan and store them in ziplock bags in the fridge.
