Taste Buds: Summertime Strawberry Pie

Its that time of year again, at least in LALA Land. A time of long summer days and even longer warm summer nights. A time when the farmers markets are overflowing with nature’s bounty and this week the strawberries burst onto the scene in all their delicious glory. And when I see a huge flat of strawberries I not only see delicious fruit to eat, I also see grandmas strawberry jam and my mama’s simple strawberry pie. So when I came home with arms full of strawberries I got to work making a pie.

This pie it’s so easy; SUPER easy as in 6 ingredients easy. And it is simply the best strawberry pie ever because the strawberries get center stage. Its fresh, it’s delicious and it will make you weep. Yup it’s that good.

    RECIPE: CHICKEN STEW & DUMPLINGS
INGREDIENTS
Pie Crust
1 ½ cup flour
1 egg
pinch salt
3/8 cup sugar
¼ pound butter, room temperature

For the Berry Filling
3 ½ cup fresh strawberries hulled
¾ cup sugar
¼ teaspoon salt
1 cup water
2 tablespoons corn starch
drop of red food coloring.

DIRECTIONS
1. Preheat oven to 350.
2. Mix all pie crust ingredients in a large bowl. This is not a rolled crust, simply press the mixture into the bottom of a pie pan.
3. Bake the pie crust for 8-10 minutes until brown and crispy.
4. Line baked pie crust with berries cut side down.
5. Combine sugar, cornstarch, salt and water. Cook over low heat slowly until thickened and clean about 10-15 minutes.
6. Add food coloring if desired.
7. Pour glaze over top of strawberries and chill for at least 2 hours.
8. Serve with whipped cream.
