Taste Buds: Peanut Butter Power Balls

Since I am exclusively breast feeding I have to make sure I get enough to eat. I am constantly ravenous for food, sometimes without warning. Needless to say getting something healthy to eat RIGHT THIS SECOND is hard. It gets even exponentially harder when I am out and about. Lately I have been constantly on the go and I am still struggling with healthy snacks I can keep in the diaper bag for just these moments. If I don’t have something in the bag I inevitably am fighting cravings for snickers and McDonalds. I had some dried fruit for a while, and then a bag of almonds but I am getting bored of these.

Last week I meet with one of the moms in my mom group and I was lamenting trying to find healthy snacks to keep in my diaper bag. And that’s when she reached into her diaper bag and changed my life. She gave me a magic peanut butter ball. Filled with yummy delicious ingredients and packed with tons of healthy calories it was the answer I had been looking for.

The recipe is surprisingly easy, just toss a bunch of ingredients in a bowl, mix, roll and chill. I must warn you to make sure to remove ALL jewelry from your hands and wrists. You will be mixing this recipe and rolling the balls with your hands; the honey and peanut butter make them VERY STICKY.

Best yet you can double or triple this batch because this recipe freezes super well. They will last about a week in the freezer but I have found myself putting them in snack bags of three and just storing the whole batch in the freezer. I grab a bag out and stick in in my bag as I head out the door and they are inevitably thawed by the time I want them (about an hour).

If you are an exercise nut these make good power balls and pack a serious energy punch. But if you are a tired hungry mama these work fantastic as well. Mix and match what you like and try a bunch of different variations. ENJOY!

    RECIPE: PEANUT BUTTER POWER BALLS
INGREDIENTS
2 ½ cups oats
½ cup wheat germ
1 cup of dried non-fat milk
2/3 cup sesame seeds
1 cup honey
1 cup peanut butter

DIRECTIONS
1. Mix dry ingredients then add wet
2. Roll into small balls and stick on a cookie sheet lined with wax paper
3. Refrigerate balls for an hour and then place them in ziplock bags.


A DELICIOUS VARIATION

INGREDIENTS
2 ½ cups oats
1/4 cup sesame seeds
¼ cup flax seeds
¼ cup chia seeds
½ cup nut butter (peanut, walnut or my favorite almond butter)
¼ cup ground nut
2 tablespoons organic coca
pinch of salt
¼ cup chocolate chips
¼ cup unsweetened coconut for rolling
¼ cup honey

DIRECTIONS
1. Mix dry ingredients then add wet. Dribble water slowly into batch if too dry. You want it just pulled together enough to make a ball
2. Roll into small balls and stick on a cookie sheet lined with wax paper.
3. Refrigerate balls for 15 minutes and then roll in coconut.
4. Return balls to cookie sheet and refrigerate for an hour Then place them in ziplock bags.
