Taste Buds: Fabulously Nutty Banana Bread

I love bananas and almost always have some in the house. However bananas have a very small window for me when they are just right, otherwise I won’t eat them. My pickiness is astounding I know. At least the bananas that pass their prime still get used. I simply wait until they get really brown and then freeze them for future banana nut bread deliciousness. Once I have four bananas and an hour and a half window I whip up this super quick and easy banana bread recipe. And boy oh boy is it ever so good. Moist and nutty and such a delicious way to start my day. Plus how could anything smeared with butter taste bad, I think its impossible. Enjoy!


    RECIPE: FABULOUSLY NUTTY BANANA BREAD
INGREDIENTS
4 large very ripe bananas (like brown folks – if frozen thaw on counter overnight)
20 tablespoons butter, softened
4 tablespoons sour cream
4 large eggs
4 teaspoons grated lemon zest
3 teaspoons vanilla extract
4 cups flour
1 ¾ cup sugar
2 teaspoon baking soda
1 ½ teaspoon baking powder
1 teaspoon salt
1 cup walnuts, finely ground into small pieces


DIRECTIONS
1. Preheat oven to
2. In a large bowl blend bananas and sour cream until just combined.
3. Add in butter a few tablespoons at a time until combined.
4. Add in eggs, lemon zest and vanilla and beat until well combined.
5. In a separate large bowl beat on low flour, sugar, baking soda, banana and salt. Add in the banana mixture and beat until smooth.
6. Spray two bread pans very well with pam.
7. Bake until toothpick inserted in center comes out clean and the bread springs back when lightly pressed about 1 hour and twenty minutes.
8. Remove from oven, let cool for 15 minutes. Insert knife around edges and gently remove the bread.
9. Serve hot or at room temperature with some butter.

Makes two loaves.
