Taste Buds: Mama’s Best Blueberry Pie

Today was Mr. Rogue’s birthday and as a surprise I got his mom’s blueberry pie that he speaks wistfully about every now and again. I am not a huge fan of blueberry pie, it’s just ok, but to him this pie is one of his all-time favorites. Since it was his birthday I got the ingredients and started making it this morning. You should have seen the GRIN on his face when he finally guessed what I was doing. If I knew it would elicit that much joy I might have been persuaded to make it that much sooner.

Regardless I baked the pie, the house filled with yummy aromas, and that night Mr. Rogue blew out his candles. I cut him a LARGE piece and me a not so large one. Mr. Rogue says it was perfect and I have to agree, in fact I went back and got another small piece because it was so DAMN GOOD. The best blueberry pie I have ever had. So thank you Mrs. Faith, I am now a lover of blueberry pie, and my husband had his best pie for his birthday.

1 recipe for Pastry crust pie (make the whole recipe for both a bottom to the pie and a top)

1 cup of sugar
3 tablespoons of corn starch
2 tablespoons flour
¼ teaspoon nutmeg
1/8 teaspoon salt
5 cups of fresh or thawed frozen blueberries
1 tablespoon fresh squeeze lemon
1 tablespoon butter

1. Preheat oven to 425 degrees.
2. In a 9 inch pie pan roll out dough.
3. Combine in a large bowl sugar, cornstarch, flour, nutmeg and salt. Mix well with a spoon.
4. Add blueberries and lemon juice and gently stir until combined.
5. Pour mixture into pie crust lined pan and then dot with butter.
6. Roll out remaining dough and cover the blueberry mixture making sure to flute the sides pressing to seal.
7. Cut slits in top of crust to let steam escape.
8. Place pie dish in oven with a cookie sheet on a rack below. This pie can ooze!
9. Bake at 425 for 10 minutes and then at 375 for an additional 45-55 minutes until bubbling.

3/4 cup flour
8 tablespoons cold butter - unsalted
1/3 cup brown sugar
1/3 cup granulated sugar
1 teaspoon cinnamon
1 teaspoon salt

1. Work the ingredients together in a large bowl until combined into crumbs
2. top the pie with the crumbs and bake as above

Makes one 9 inch pie
