Taste Buds: Mango Salmon with Rice

If you haven’t already noticed I have an obsessive type of personality. I like something and I can’t just have a little, I need to have a ton, all the time, now. So when I latch onto something, watch out, get out of the way, and oh don’t expect anything from me because it may take a while to work it out of my system.

Some obsessions are all encompassing life changes but then there are small things, like the Mango Salmon recipe I am currently working through. You see I made it, after not making it for a while, for dinner the other night.


It was so amazing that I had to have it again the next night. Which meant I needed to go to the grocery store. I would never get away with having two of the same dinners in a row with Mr. Rogue but since he is so busy at work I am often eating alone, aka I can do whatever I want. So I made the Mango Salmon recipe again the next night.


I wish I could say that it stopped there but I went to the store again, and since this recipe takes a while to cut everything up, and because I am obsessed, I decided to make more than one. I made four batches and I ate it every single night this week for dinner.

Call me crazy but making dinner was healthy and a breeze this week.


Cook 2 cups of rice

For the Mango Salsa
1 Can black beans drained and rinsed
1 red pepper, rough chopped
1 mango, rough chopped
1 small purple onion
12 basil leaves
1 orange freshly squeezed
3 cloves garlic peeled and diced
Salt and Pepper

For the Salmon
4 filets of salmon
salt and pepper

1. Mix all ingredients for mango salsa and refridgerate for at least two hours.
2. Broil salmon in the oven or grill outside.
3. We like the mango salmon served over the rice with the fish filet off to the side.

Makes 4 servings

At least this dinner is good for you, I LOVE that Mango Salsa too and it was funny that we ate it on the same night you did. Of course, we didn't have it four times in a row. lol.

YUM! YUM! YUM! and healthy! I would play with adding a little cilantro to it, because I think cilantro would compliment the rest of the ingredients, and because I love cilantro. If I remember correctly, you aren't crazy about it.

Haha 4 times! That is pretty fantastic! Looks good, even though I'm not a fan of Salmon. I second INzodda's cilantro scheme
