Taste Buds: Garbanzo Bean Vegetable Soup


This soup is perfect for these chilly fall days. I love how the color and texture of it even reminds me of the fall season and there is nothing better than a hearty soup to warm you up. Simple and easy to make this recipe is packed with wonderful flavour. Enjoy!

2 tablespoon olive oil
½ chopped onion
1 cup chopped carrots
1 chopped zucchini
4 cloves minced garlic
1 can chopped tomatoes
2 cans garbanzo beans rinsed and well drained
1 tablespoon ground thyme
1 tablespoon fresh oregano
6 cups vegetable broth
¼ cup chopped parsley
1 teaspoon cumin
salt and pepper to taste

3 ½ cups vegetable broth
2 cups Israeli Cous cous
1 tablespoon butter

1. In large pot heat olive oil
add onions, carrots and dry spices cook 10 min
add zucchini, tomatoes (with juice), garlic and fresh herbs cook 5 min

2. Add veg broth and garbanzo beans bring to boil reduce heat and simmer for 30 min

3. While soup is cooking make couscous
melt butter
add couscous and lightly brown about 5 min
add veg broth bring to boil
reduce to simmer and cover for 20 min or until most stock has been absorbed
fluff with fork
serve soup with a scoup of cous cous
