Taste Buds: Margarita Pizza


One thing on this new food kick that Mr. Rogue and I are coasting on is that I miss, OH HOW I MISS YOU delicious, delectable, cheesy, gooey pizza. So I decided to make my own, a version that was still pizza but to dial down some of the most terrible aspects of it.

Now I did ‘cheat’ a bit on this and I bought premade dough from Trader Joes but I am determined sometime in the near future to attempt to make my own pizza dough which I think would be really fun! The only difference in this pizza is that you need to put down the toppings and then put the cheese on top of that. Trust me its good.


This recipe is based on Ms. Eden’s version of pizza and it is DELICIOUS.

1 Trader Joes Pizza Dough
½ Jar Tomato Basil Lowfat Pizza Sauce
5 roma tomatoes
15 basil leaves
2 cups loosely packed spinach leaves
15 baby portabella mushrooms
6 oz goat cheese
3 oz mozzarella balls
3 oz parmesan cheese

1. Preheat the oven to 400 degrees. If you have a pizza stone put this in the oven. It is not mandatory to have a pizza stone but you will get a crispier crust if you have one.
2. The dough needs to set out for 20 minutes. While it is setting you can prepare your vegetables and cheese. Slice your mushrooms and start them sautéing. Thinly slice your tomatoes. Rough chop basil and spinach into large chunks. Shred your parmesan, cut up the mozzarella balls and crumble the goat cheese. Have everything ready to the side.
3. Lightly pam or olive oil a baking sheet.
4. Stretch out your dough using a bit of flour, I just stretch mine on the counter and place on baking sheet.
5. Spread out the sauce evenly on the crust.
6. Place mushrooms, tomatoes, basil and spinach on the pizza.
7. Top with cheese and bake for 30-40 minutes.

We had pizza yesterday too! SMELLS divine!

OMG! I wish we would have actually made my actual recipe. These pizzas were all made with what we had. No chance for shining baby!!!! It is like going on a date with Lulu on. It is good but never can make up for planning. Here is my Magic Mushroom recipe.

A little creme fraiche and goat cheese serve as your sauce. Sauteed shitake, baby portabellos and field mushrooms. Arugula and then a layer of mozarella. It is the most amazing thing ever!!!!

This one should be called, "What we had in the fridge pizza" or "Oooops I used all the cheese!" pizza! Lol. Margherita should be only tomato and pizza. Can you tell I am craving pizza...again! Ha!
