Taste Buds: Simple Spinach and Tangerine Salad


Mr. Rogue is working like a madman which means I will be eating alone most nights. Because cooking for one is never as much fun as cooking for two I am working on simpler meals. Lately I have been experimenting with various simple salads trying to get a little more variety and add be a bit adventurous with my toppings while still staying healthy. This particular recipe is a super simple salad but had a surprisingly complex flavour. By marinating a tangerine in Balsamic Dressing the salad got a whole new kick.


The tangy of the dressing with the sweetness of the citrus really offset the bitterness of the raw spinach and it is officially my new favourite salad.

1 Clementine - 35
1 ½ Tablespoons of Trader Joes Balsamic Vinaigrette Dressing 55
½ bundle of Spinach (about 1 ½ cups loosely packed) 10
10 Cherry Tomatoes 35

1. Peel, cut each slice in half and deseed Clementine.
2. Place Clementine in small bowl and add balsamic vinaigrette, stir and let sit for 20 minutes. Do not leave longer than 20 minutes.
3. Wash, de-stem and tear leaves into bite sized pieces. Put on plate.
4. Cut cherry tomatoes in half and put on salad.
5. Put the Clementine dressing mixture on top and serve.

CALORIES IN THIS MEAL: 135 per person (Serves 1 person)

Maybe add some cheese for some much needed protein, especially if you are going to have a baby! Remember to get all basic 4 food groups. Looks like your concentrating on the Atikins diet? no carbs?
