Taste Buds: Sinfully Spicy Carrot Cake

Mr. Rogues favourite cake in the world is this spiced carrot concoction. When I learned of his obsession with this desert I could not help but make cake after cake until I found the perfect blend of recipes.

Ingredients
1 1/3 cups of all purpose flour
1 cup sugar
1 ½ teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon ground cloves
½ ground nutmeg
½ teaspoon ground allspice
½ teaspoon salt
2/3 cup vegetable
3 large eggs
1 ½ cups grated peeled carrots
½ cup crushed lightly drained pineapple
1 cup unsweetened coconut
1 cup raisins (optional)

Preheat the oven to 350 degrees

Blend all the dry ingredients into a large mixing bowl
flour, sugar, baking soda, baking powder, cinnamon, cloves, nutmeg, allspice, salt

stir together with a spatula
vegetable oil

eggs and blend together

coconut

carrots shred it

dice it small

and add to the bowl

pineapple and blend together

pam the pans so the cake does not stick

put the batter in the pan and spread evenly

bake for about 25-30 minutes until a toothpick inserted in the center comes out clean. Let the cake rest in the pan for five minutes.

Then remove and let it cool on the rack

One fully cooled place one cake onto a cake plate and frost.

Spread the frosting over the first layer. For this recipe I use Betty Cockers pre-made Cream Cheese Frosting.

Then add the second layer.

Coat that layer too
